Having worked the past 30 years in Michelin-starred restaurants, it’s rare for any type of new knife-ware or equipment design to enter my kitchen and immediately impress. Until Bergner arrived! Knives, pans, pots and lids –I knew there and then that, at last, there was a new design fabric that lends itself to every aspect of my cookery. A very well balanced tool – it’s me! A knockout!

Paul began his career in catering at the age of 20. After completing three years of catering studies, Paul secured roles at various Michelin-starred restaurants including Canterbury’s 74 Restaurant and Gidleigh Park. He later moved to Nunsmere Hall Hotel in Cheshire as Head Chef where his partnership with Katie O’Brien began.

Paul began his career in catering at the age of 20. He later moved to Nunsmere Hall Hotel in Cheshire as Head Chef where his partnership with Katie O’Brien began.

 

Upon opening Juniper with Katie, the accolades began pouring in, becoming the North West’s only 4 AA Rosette restaurant and Greater Manchester’s only Michelin-starred restaurant as well as ranking in the top 20 restaurants in The Good Food Guide.

 

Paul and Katie relocated to Edinburgh and opened 21212, a restaurant with rooms, in May 2009. 21212 soon became a leading restaurant in ingredient innovation and while Paul’s creations yield unexpected combinations, the deep thought given to the balance of each dish ensures flavours that complement rather than compete.

 

The restaurant received numerous awards immediately after opening including winning the Best New Restaurant in the UK 2009 at the National Restaurant Awards. In January 2010, only eight months after opening, 21212 received a Michelin star, making 21212 the only Michelin-starred restaurant with rooms in Edinburgh to date. Success followed quickly with 21212 getting recognised by the Catering in Scotland Awards three years in a row for Best Newcomer (2010), Best Chef (2011) and Best Restaurant (2012). In 2012, Paul was also awarded the Prince Philip Medal at the City & Guilds ceremony, which recognises the outstanding achievements of an individual within their chosen career. 

 

The year 2013 saw 21212 receive 4 AA Rosettes in the AA Guide, one of the most well respected restaurant guides in the UK since 1955. In 2014, Paul was awarded Restaurant Chef Award at the Craft Guild of Chefs Awards. The restaurant was placed at number 23 in The Sunday Times Top 100 Restaurants List in both 2014 and 2015.
