 METHOD

  1. Draw a circular shape on a platter with the balsamic cream.
  2. With the oven-glazed melon as a base, assemble the asparagus with the Serrano ham on top.
  3. Lastly, for the garnish, a circular arrangement of herbs, seeds, spheres of cheese, strawberries and thin slices of parmesan.

  • 80 g asparagus
  • 30 g oven-glazed melón
  • 30 ml balsamic cream
  • 5 g pine nut seeds
  • 25 g strawberries
  • 3 g peppermint
  • 3 g marigold
  • 3 g chamomile
  • 35 g Serrano ham
  • 40 g goats cheese
  • 20 g parmesan cheese.
