Cut avocado in half, remove the seed gently without damaging the bottom part of the avocado. Slice a small piece at the bottom to allow the avocado to stand on its own. 

 

Bring a pot of water up to a boil, add a touch of salt then place shrimp in the water and poach them gently. Remove shrimp after 2 to 3 minutes and place into an ice bath to stop it...

Cut shrimp into desired size, add mayo, chilli flakes, chopped shadon beni, minced garlic, lime juice, chilli flakes, diced cucumber and red bell pepper. Mix to combine and season to taste with salt and pepper. 

 

Place into avocado bowl and serve cold.

  • 1 semi soft round bottom avocado
  • FOR SHRIMP SALAD
  • 1/4 lb 16 - 20 sized shrimp
  • 3 tbsp mayo
  • 1 tsp ime juice
  • 1 clove garlic
  • 1/2 tsp chilli flakes
  • 2 shadon beni leaves
  • 1 small cucumber
  • Half of red bell pepper
  • Salt and black pepper to taste.
