METHOD
 
  1. Clean tomato greens, in blender puree oil and greens until smooth. 
  2. In sauce pan bring mixture to boil, strain through cheesecloth, cool, reserve.
  3. Clean berries, in blender puree with vinegar.

  4. In sauce pan bring mixture to boil, strain through cheesecloth, cool, reserve.
 
ASSEMBLING
  1. Use a ring mold, spread buratta inside mold on cold plate.
  2. In mixing bowl toss berries and tomatoes with salt, pepper, chives, pistachios, oil and vinegar, season to taste.
  3. Carefully assemble berry mix on burrata.
  4. Garnish salad with picked herbs.

  • SALAD
  • Fresh Burrata x6 2oz
  • 2 cups mixed berries
  • 2 cups Cherry tomatoes
  • 4 tbsp tomato vine oil
  • 2 tbsp berry vinegar
  • 2 tbsp chopped chives
  • TOMATO VINE OIL
  • 1 cup tomato vines and greens
  • 2 cups virgin olive oil
  • 3 tbsp pistachios
  • BERRY VINEGAR
  • 1 cup mixed berries
  • 3 cups champagne vinegar.
