Add in the mango juice; when it comes to the boil, add in the mango pulp, coriander, basil and apple vinegar; leave to boil for a few seconds and then the sauce is ready.

Ingredients 4 persons
  • FISH
  • 4 pieces fish fillet
  • Season with salt & pepper
  • SAUCE
  • 1 cup fresh mango juice (grind the pulp with a little water)
  • 1 cup diced mango pulp
  • 1 cup finely diced red onion
  • 1/3 cup olive oil
  • 1 spoonful finely chopped ginger
  • 1 spoonful fresh diced jalapeño pepper (remove seeds for less spicy taste)
  • 3 spoonfuls fresh coriander
  • 3 spoonfuls fresh basil
  • 1 spoonful apple vinegar
  • Salt & pepper.
