Passion Fruit Mousse

Soak the gelatin in cold water. Boil the passion fruit concentrate with the sugar for about 15 minutes. Passion Fruit Mousse

Soak the gelatin in cold water. Boil the passion fruit concentrate with the sugar for about 15 minutes. Take off the heat and mix in the gelatin until it dissolves completely.  Set aside to cool down. Beat the whites till stiff. Gradually add in the fruit juice; stir quickly. Place in a mould and refrigerate until the mousse sets or takes on a consistency allowing it to be removed from the mould with hot water. 

 

Custard

Put the milk and cinnamon on to cook; leave ½ cup to dissolve the cornflour.  Once boiling, add in the dissolved cornflour and the beaten yolks.  Stir for 2 minutes. Then, add in the sugar, stirring in well.  Leave to stand before adding in the vanilla.

  • PASSION FRUIT MOUSSE
  • 1 quarter gallon passion fruit concentrate
  • 1 lb sugar
  • 8 eggs
  • 4 sachets edible gelatin
  • CUSTARD
  • 2½ cups milk
  • 1 cinnamon stick
  • 4 egg yolks
  • 2 spoonfuls cornflour
  • 1 cup sugar
  • 1 spoonful vanilla.
