Ingredients 4 persons
  • 240 g cooked quinoa grain
  • 4 tomatoes (chopped)
  • 2 onions (cut brunoise)
  • 1 peeled cubed cucumber
  • Juice from 4 lemons
  • 12 leaves peppermint (chopped)
  • 30 g parsley (chopped)
  • 5 cl extra virgin olive oil
  • Salt & ground black pepper to taste.
