  • SCALLOPS
  • 8 scallops
  • 4 sticks butter
  • Verdolagas
  • Corn ash and lemon
  • Spring onions (red)
  • Red "serrano" chilli
  • Smoked Maldon sea salt
  • THE WHITE GARLIC
  • 1 baguette
  • 50 g peeled almonds
  • 2 spoonfuls vinegar
  • 5 "piquin" chillies
  • 37.5 ml olive oil
  • 50 ml water
  • 1 clove garlic (peeled)
