Ingredients 4 persons
  • INGREDIENTS
  • 4 to 8 heirloom tomatoes cut to preference (various sizes and colours)
  • 8 broccolini
  • 200 ml goat cheese
  • mousse
  • 2 ripe peaches (grilled)
  • 100ml black olive
  • tapenade
  • 100ml puffed amaranth
  • 50 g sorrel sprouts
  • 1 peeled cucumber
  • BLACK OLIVE TAPENADE
  • 250ml sun dried black
  • olives
  • 1 tbsp balsamic vinegar
  • 2 tbsp olive oil
  • 1 tsp chopped rosemary
  • MARINADE
  • Blend all ingredients in blender mix to taste with tomatoes
  • 1/2 tsp sesame oil
  • 3 tbsp olive oil
  • 1 tbsp mustard
  • 1 tbsp honey
  • 1 tsp lemon juice
  • 1/2 tsp salt
  • GOAT CHEESE MOUSSE
  • 1/2 cup goat cheese
  • 1/8 cup 35% cream
  • 1 tsp anise seed
  • salt and pepper to taste.
