Method.

Cut the vegetables into thin slices.

Roll out the pastry into a microwave- safe tart dish and prick it with a fork so that it does not rise while cooking. 

Spread the tomato base on the pas- try. Place alternate layers of slices of to- mato, courgette and aubergine on top until the whole tart is covered. Season each layer.

Method.

Cook in microwave + grill mode for 10 minutes on full power. Once cooked, serve the savoury vege- table tart garnished with a few sprigs of fresh oregano and parsley, and season with olive oil.

  • 1 sheet of fresh puff pastry
  • 4 tomatoes
  • 1 courgette
  • 1 aubergine
  • 100 g tomato base (lightly fried onions and garlic and tomatoes)
  • Fresh oregano and parsley
  • Olive oil
