Banana cake with peanuts
Ingredients
300 g of banana puree100 g of softened butter
120 g eggs
75 g crystal sugar
Vanilla
200 g of flour
8 g baking powder
A pinch of salt
-Crispy core:
150 g milk chocolate
75 g of waffle crumbs
75 g peanut butter containing pieces of peanuts
Process:
Melt the milk chocolate and peanut butter, add the waffle crumbs. Mix well.
Place the square ring up to a height of 1 cm. We freeze.
Remove the ring and cut strips along the length of our cake mood, measuring 1 x 1 cm.
-Surface / chocolate glaze
300 g of roasted peanuts
30 g of cooking oil
White chocolate
Natural yellow color or turmeric of your choice.
Process:
Melt the chocolate, add the oil, and mix well with a stick mixer. Add color or turmeric. Stir again to obtain a smooth and shiny mass. Cool to 30 degrees Celsius before use.
Process:
Mix sugar and eggs. Add softened butter, stir. Add flour with baking powder and salt.
mix everything together into a smooth and homogeneous mass.
Stir in banana puree.
Fill the models halfway. Add the crispy core, and fill a little lower than the edge of the model.
Bake for 40 to 45 minutes at 180c.
Let the baked cake cool. Store it in the refrigerator overnight.
-Assembling
Coat the cake with peanut butter on top. Sprinkle with roasted peanuts.
Soak in chocolate glaze.
Chef tip: always eat the cake at room temperature.
