Berry and Tomato Salad with Burrata

SALAD
Fresh Burrata x6 2oz
2 cups mixed berries
2 cups Cherry tomatoes
4 tbsp tomato vine oil
2 tbsp berry vinegar
2 tbsp chopped chives
TOMATO VINE OIL
1 cup tomato vines and greens
2 cups virgin olive oil
3 tbsp pistachios
BERRY VINEGAR
1 cup mixed berries
3 cups champagne vinegar.
METHOD
- Clean tomato greens, in blender puree oil and greens until smooth.
- In sauce pan bring mixture to boil, strain through cheesecloth, cool, reserve.
- Clean berries, in blender puree with vinegar.
- In sauce pan bring mixture to boil, strain through cheesecloth, cool, reserve.
ASSEMBLING
- Use a ring mold, spread buratta inside mold on cold plate.
- In mixing bowl toss berries and tomatoes with salt, pepper, chives, pistachios, oil and vinegar, season to taste.
- Carefully assemble berry mix on burrata.
- Garnish salad with picked herbs.
