500 g sugar
a few drops lemon juice
Flan
1l milk
250 g sugar
10 eggs
Caramel
Put the sugar on the heat and cook until liquefied and dark brown in colour; add the lemon drops and cool down: spread out on greaseproof paper.
Cut little pieces of caramel and melt in a microwave; stretch and fold to glaze, making sure not to burn oneself. Make little balls and blow them as if they were glass. Set aside.
Flan
Cook the milk with the sugar (optional: aromatize with orange peel) and pour over the beaten eggs; pour into flan moulds and bake in a bain-marie until it curdles; when cold, put through a blender.
Fill the balls with the flan cream.
