Ingredients

90 gr red prawns cut in thin slices
4 slices of high lard
10 ml limoncello
5 ml apple vinegar
5 ml olive oil

Elaboration 

In a plate ,mount the carpaccio with the prawns, apart prepare the vinaigrette with the oil, the vinegar and the limoncello, season with it the carpaccio add salt in scales and black pepper, finish with the lard slightly melted with a blowtorch.
