Gingerbread cookies

Ingredients

100 g salted butter
75 ml honey
135 g granulated sugar
1/2 tsp. ground cinnamon
1/2 tsp. ground ginger
1 tsp. ground cloves
1/2 tsp. ground cinnamon
75 ml heavy cream
300 g all purpose flour
1/2 tsp. baking soda
Pinch of salt.

 METHOD

  1. Combine butter, honey and sugar in a saucepan and place over medium heat. When the mixture is melted, stir in the spices, remove from the heat and let cool for 5 minutes. Stir in the heavy cream.
  2. Combine the flour, baking soda and salt in a bowl. Pour the wet mixture into the dry mixture and stir until a soft dough forms. Let it rest in the fridge for at least 4 hours. Preheat the oven to 160°C.
  3. On a lightly floured surface, roll out pieces of dough to about 5-6 mm thickness.
  4. Bake the cookies for 5-6 minutes depending on size.
