Meringue Gelato with Shaved Cured Yolks

Ingredients

GELATO

Cream 3 qts

MERINGUE

Egg Whites ½ qt
Sugar ½ qt

SUGAR CURED YOLKS

Whole Yolks 20
Sugar 2qt
Salt 2qt.

 

METHOD 

  1. Mix salt and sugar together.
  2. Spread half the mixture in a pan.
  3. With egg shell make 20 indentations of a half circle, carefully place whole yolks in the indents.
  4. Cover with the remaining salt mix.
  5. Let sit refrigerated for two weeks.
  6. Remove from salt mix, wash off excess mix, towel dry, toss in sugar, keep refrigerated until further use.
  7. Whip sugar and yolks together on high speed until stiff peak forms. Heat cream until scalding in sauce pan.
  8. Fold hot cream into meringue, strain and cool.
  9. Once gelato base is cool and settled, process in Ice cream machine according to instructions.
  10. Keep frozen.

ASSEMBLING

Scoop ice cream into bowl, with microplane shave yolks over the top.
