Ingredients

50gm miso
1 garlic clove
0.5 pickling onion
25ml rice wine vinegar
50ml canola oil
20gm sugar
7ml seasame oil
10ml sake
10ml mirri
240gm Hanger steak
4 Button mushroom stalks sliced
4 Baby turnip sliced
5gm Cocoa nibs blitzed
Micro coriander

Method: Combine all ingredients for dressing and blitz till smooth.

Slice the hanger into 8 30gm portions and grill on both sides, slice the grilled portions in half length ways and dice into cubes.
Dress with some miso dressing and place in the middle of a bowl, cover with alternate layers of mushroom and turnips.

Dust with the cocoa nibs and garnish with the micro coriander.
