Oat And Banana Pancakes (Gluten-Free)

Ingredients

2 bananas
250g rolled oats
10g brown sugar
4 eggs
1 pinch of salt
Ghee or olive oil
Honey to taste
Strawberries to taste
Blueberries to taste
Blackberries to taste

 METHOD

  1. Beat the eggs well in a bowl; add salt, brown sugar and stir.
  2. Add the oats, stir well and let stand for 5 minutes.
  3. Separately, squash the bananas with a fork then add to the mixture.
  4. Heat 3 small frying pans. Add the ghee or olive oil, add a tablespoon of the mixture, reduce heat, cover and let it simmer and set. When solid, turn over and brown the other side.
  5.  Place 3 pancakes above each other on 2 separate plates, then add the chosen red berries or fruits on top and to the side.
