Ingredients
2 bananas250g rolled oats
10g brown sugar
4 eggs
1 pinch of salt
Ghee or olive oil
Honey to taste
Strawberries to taste
Blueberries to taste
Blackberries to taste
METHOD
- Beat the eggs well in a bowl; add salt, brown sugar and stir.
- Add the oats, stir well and let stand for 5 minutes.
- Separately, squash the bananas with a fork then add to the mixture.
- Heat 3 small frying pans. Add the ghee or olive oil, add a tablespoon of the mixture, reduce heat, cover and let it simmer and set. When solid, turn over and brown the other side.
- Place 3 pancakes above each other on 2 separate plates, then add the chosen red berries or fruits on top and to the side.
