Pike Pearls ala Tundra

Ingredients

Approx 400 g fillet of fresh pike
Butter for frying
Freshly ground black pepper
1–2 tablespoons curry paste
Salt
200 ml whipping cream
Fresh coriander Single clove garlic.

METHOD

  1. In order to grind the pike fillet into pearls, run it through a meat grinder twice.
  2. Cook the ground fish immediately in a frying pan.
  3. Add the seasoning and cream to the pan and allow to reduce.
  4. If necessary, use thickener for the sauce.

 

NOTE 

This recipe for pike pearls was inspired by a local fish product development day. The idea was to create an easy recipe to increase the use of pike both in domestic and professional kitchens. The dish was an immediate success, and it has had a place in the Tundra selection ever since. This dish works well as a small starter with Lappish almond potatoes, or as a pasta sauce. Pike pearls also add a nice touch to a cold potato salad with an oil-acid marinade or mayonnaise dressing.
