Ingredients
250 g sea bass filletSalt & pepper (to taste)
Olive oil
½ cup broccoli (only the green tops)
1 spoonful mascarpone cheese
3 spoonfuls single cream
¼ teaspoon salt
Half purple onion
Half cup flour
Frying oil
Salt.
Procedure
Place the seasoned sea bass fillet in a pan with a dash of olive oil and cook on a medium flame: 8 minutes/side, depending on fillet thickness.
Cut the green tops from the broccoli using a small knife (or paring knife) and put them in a small pot with the mascarpone and cream. Add in salt and stir on a low flame for 3 minutes.
Mix the flour with a little salt; roll the onion (cut into rings) in the mixture and fry it in hot oil.
For the assembly: Place the cream of broccoli onto the plate, then the sea bass and, finally, the fried purple onion on top.
