300 g pumpkin

70 g cranberries
50 g honey
50 g Demerara sugar
50 ml cognac
5 g Brazilian pepper
10 ml grenadine
5 g corn starch

Apples and pumpkin are the perfect culinary tandem with a vivid flavour, which in this dish is harmoniously supplemented with sweet notes of a pear. This dietary dessert is incredibly delicious and very useful. It easily cheers you up and leaves a feeling of fullness for several hours, it has a wonderful odour and unique flavour...

To make the dish exceptional, with an ideal texture, be selective to the choice of ingredients for it. Give preference to sweet pumpkin varieties, and the apples and pears should be juicy and elastic.

Method: 

  1. Wash the juicy apples and pears, remove the skin with a vegetable peeler. Peel the pumpkin rind and separate seeds from pulp. Our appetizing dessert will be prepared in the form of an exquisite Caprese with alternating layers. For this, cut the fruit and pumpkin into thin alongside slices.
  2. In the meantime prepare a fragrant and thick cranberry sauce. Put the washed cranberries in a saucepan with heavy bottom, add a couple of spoons of water and honey and let it poach on low heat for 5 minutes until the berries start to simmer. Then, stirring constantly, add caramel Demerara sugar, cook the sauce for another 5 minutes, until the sugar completely dissolves. Add cognac, grenadine (thick sweet syrup) and Brazilian pepper. It will take a few minutes to evaporate the sauce. Add a little of corn starch to bring the sauce to the ideal consistency.
  3. Pour a couple of spoons of sauce into the heat-resistant portion dishes, and lay the pumpkin strips, alternating them with thin slices of pears and apples. Top the composition with the generous amount of cranberry sauce. Put this splendour into the oven. 35 minutes at 180°C is enough for all the ingredients to exchange their odours and flavours and to absorb the spice of the sauce, forming a pleasant dietary composition: light, tender and sweet.

To serve: 

Coat this warm tempting crusted dessert with vanilla ice cream scoop, which will complement its flavour profile and become its harmonious contrasting element. Decorate with a mint sprig.
