Apple fairy cakes

Ingredients

4 eggs
200 g sugar
250 ml olive oil
250 ml milk
375 g flour
1 sachet of baking powder
1 apple

Method.

Chop the apple into small cubes.

Whisk the eggs and sugar together. Once the mixture is pale and fluffy, add the olive oil and milk and beat gently.

Add the sieved flour and baking powder and mix thoroughly. Finally, add the apple cubes.

Place the paper cases in a muffin or fairy cake mould. Half fill each mould with the mixture. Bake in the oven at 180°C for approximately 15 minutes.
