Ingredients

200 g beef sirloin
100 g fresh cheese
300 g Cirio tomatoes
1 lime
300 g salt (for the marinade)
300 g sugar (for the marinade)
Oil
Salt
Pepper
Fresh oregano
Basil
Icing sugar.
 METHOD
  1. Marinade the beef in a 1:1 salt/sugar mix for 4 hours. Ensure the meat is completely covered.
  2. Wash under the cold tap, then slice in preparation for the tartar.
  3. Chop the tomatoes in halves or quarters and place them on a greased oven tray. Season with salt, pepper, fresh oregano and chopped basil. Add the icing sugar and oil on top; bake for 2 hours at 80ºC.
  4. Soften the cheese in a bowl using a rod; season with oil, salt, pepper and lime peel.
  5. Serving on a base of pieces of beef, add the cheese and top off with the tomato confit.
