Ingredients
200 g beef sirloin100 g fresh cheese
300 g Cirio tomatoes
1 lime
300 g salt (for the marinade)
300 g sugar (for the marinade)
Oil
Salt
Pepper
Fresh oregano
Basil
Icing sugar.
METHOD
- Marinade the beef in a 1:1 salt/sugar mix for 4 hours. Ensure the meat is completely covered.
- Wash under the cold tap, then slice in preparation for the tartar.
- Chop the tomatoes in halves or quarters and place them on a greased oven tray. Season with salt, pepper, fresh oregano and chopped basil. Add the icing sugar and oil on top; bake for 2 hours at 80ºC.
- Soften the cheese in a bowl using a rod; season with oil, salt, pepper and lime peel.
- Serving on a base of pieces of beef, add the cheese and top off with the tomato confit.
