Brown Butter Fig Cakes

Ingredients

450g Browned
Unsalted Butter
880g Powdered Sugar
320g Almond Flour
334g Bread Flour
8g Baking Powder
1 ea Vanilla Bean
80g Invert Sugar
890g Egg Whites
As Needed Fresh Figs

Method:

Allow the brown butter too cool slightly and strain
Be sure to measure the butter after browning and straining
Reserve and keep warm
Sift together all the dry ingredients
Add the invert sugar and the seeds scraped from the inside of the vanilla bean
Add the warm browned butter and mix well
Add the egg white slowly mixing well between additions
Chill the batter thoroughly
Pipe mixture into silicone baking forms about 2/3 way full
Cut the figs into quarters and place on top of the batter
Bake 350F until golden brown
