Ingredients

12 cup Cream
20 Yolks
2 Cups Sugar
36 oz 72% Chocolate
40 g Salt.
Method:
  • Bring cream and sugar to a boil.
  • Whisk yolks and temper into cream, cook until thick.
  • Fold in chocolate and mix in until smooth. Strain and cool. Let set in appropriate container.
