1 grapefruit
2 clementines
2 oranges
2 carrots

For the lavander icecream
500 ml of milk
100 ml of fresh milk cream
1000 gr sugar
1 spoon of dryed lavander flowers
For the cadamom syrup
3 cardamom berries
300 ml of water
100 gr sugar
For the herbs scented infusion
1 lt water
200 gr sugar
1 mint´s twig
1 vanilla bean
2 star anise
some leaves of lemon verbena
lemon and orange skin
1/4 Cinnamon stick
For Lavander icecream:
Heat milk, cream and sugar at 85 °C; add the lavander and then cool and leave in the fridge for 12 hours. Then filter and cream with the ice cream maker. Skin the citrus slice, and cut the carots in little cube.
For the infusion:
Put all the ingredients in a pot and boil. Then leave rest for 30 minutes. Filter and add citrus fruits, carrots and leave macerating for a day.
Serve:
Put on the plate a lavander ice cream ball; then put citrus fruits, carrots and a spoon of herbs infusion, fresh herbs and some meringue.
