Fish in mango sauce

FISH
4 pieces fish fillet
Season with salt & pepper
SAUCE
1 cup fresh mango juice (grind the pulp with a little water)
1 cup diced mango pulp
1 cup finely diced red onion
1/3 cup olive oil
1 spoonful finely chopped ginger
1 spoonful fresh diced jalapeño pepper (remove seeds for less spicy taste)
3 spoonfuls fresh coriander
3 spoonfuls fresh basil
1 spoonful apple vinegar
Salt & pepper.
Seal fish in a hot pan with olive oil; finish cooking in the oven at 175 degrees centigrade for 4 to 7 minutes (depending on thickness).
Add the olive oil into a hot pan.
Add in onion, chilli and ginger; cook for a couple of minutes.
Add in the mango juice; when it comes to the boil, add in the mango pulp, coriander, basil and apple vinegar; leave to boil for a few seconds and then the sauce is ready.
