Green plantain basket stuffed with meat

Ingredients

  • 1 green banana
  • 150 grams of skirt steak or entrails
  • 1 chopped garlic clove
  • 30 grams of chopped onion
  • 2 leaves of Culantro or Macho leaf
    if you can't get cilantro it works.
  • 100 grams of tomato sauce
  • salt and pepper to taste
  • 30 grams of olive oil
  • Vegetable oil
  • The entrail is a tender meat that can be cooked on the grill. If you use stew meat, it is important to cook it until it is tender.  Both meats should be tender.
  • In a skillet over medium low heat, add the olive oil, cilantro, garlic and chopped onion.  Cook until vegetables are cooked.  Add the tomato sauce and cook until you have a homogeneous sauce. 
  • Add the shredded meat and adjust the salt and pepper.
  • Separately peel the plantain and cut into 8 to 10 pieces, depending on the size of the plantain.
  • In a small pot add the vegetable oil and heat over high heat.  When the oil is hot, add the chopped plantains and cook. They will be ready when you touch them and they have changed color. Remove them from the oil.  With the help of a mortar and pestle, we will make the canastatitas. If you have the pataconera, it will be better.
  • When you have the canastitas ready. Remove them from the oil and place them on paper towels to drain the oil.
  • Place each basket on a nice plate or tray and place a spoonful of the meat you prepared on each one.
  • Garnish with cilantro leaves.
