METHOD
COCONUT MILK INFUSION
- Pour the coconut milk into a deep pot and add in coriander, garlic, onion, cinnamon sticks, cardamom seeds, sweet criollo chilli, ginger and leek.
- Simmer on a medium heat, then stir in scallop sauce, powdered hondashi, fish sauce and mirin.
- Leave to cook for a little longer, reducing the mixture to a light cream.
PLANTAIN CRISPS
- Peel a very green plantain and slice thinly.
- Fry in hot oil until golden and crunchy.
