Ingredients

Coconut milk
Garlic
Onion
Cinnamon sticks
Cardamom seeds
Sweet criollo chilli
Ginger
Leek
Scallop sauce
Powdered hondashi
Fish sauce
Mirin
Oil
Green plantain.
 METHOD
COCONUT MILK INFUSION
  1. Pour the coconut milk into a deep pot and add in coriander, garlic, onion, cinnamon sticks, cardamom seeds, sweet criollo chilli, ginger and leek.
  2. Simmer on a medium heat, then stir in scallop sauce, powdered hondashi, fish sauce and mirin.
  3. Leave to cook for a little longer, reducing the mixture to a light cream.
PLANTAIN CRISPS
  1. Peel a very green plantain and slice thinly.
  2. Fry in hot oil until golden and crunchy.
