Lavender Truffle Candies

Ingredients

300g white chocolate
100g 33% cream (60g of which to add into candies)
2 tablespoons lavender flower heads (depends on desired saturation)
1 teaspoon grated blackcurrant (for color)
Freeze dried berry powder
Grated coconut.

1. Boil cream with lavender, let infuse for 1-2 hours 

2. Steam 60 g flavored and streamed lavender cream, stirring all the time until it is smooth. After remove from fire and add mashed blackcurrant for color.

3. Blend and chill for 4 hours to harden. 

4. Form the lavender mixture into candies, and dip into the freeze dried berry powder and grated coconut.

Store it in a fridge.
