Prawns, grapefruit mayonnaise and beet gel.

Ingredients

  • Prawns 2 units
  • Mayonnaise 30g 
  • Agar agar agar 1g 
  • Grapefruit 2 units  
  • Siracha 3g 
  • Honey 5g   
  • Garlic 1 unit
  • Beet 1 unit 
  • Gelatin 1 slice

1. Clean the prawns and cook at low temperature 55 g for 9 min.  
2. Prepare the gel with a liter of water and the beet, take to the fire, process, liquefy and without lumps bring it to boil, at the moment that it breaks boil add the gel and agar agar and leave in refrigeration or cold room.                                            
3. With the mayonnaise take it to the blender and add the grapefruit, garlic, honey, siracha.
4. Before assembling the dish, grill the prawns for 1 minute.
5. To assemble the dish, place the mayonnaise in the center of the plate, the prawns and over them very subtly place the gel.
