Raw scallops, green apple vinaigrette

Ingredients

  • 150 g fresh scallops
  • 1 green apple
  • 1 red onion 
  • Parsley
  • 2 eggs
  • 3 lemons 
  • 1 canola oil 
  • Dijon mustard 
  • 5 g fleur de sel 

 

  • Cut the scallop into thin slices and season with fleur de sel. 
  • Parsley and chive emulsion
    • 1 teaspoon Dijon mustard
    • 2 egg yolks
    • 1 cup chopped parsley and spring onions
    • 1/2 tablespoon lemon juice
    • 300 ml oil (approximately)
    • Salt (to taste)
    • Black pepper (to taste)
  • In the bowl of a blender, add the egg yolks with the mustard, parsley and chives and lemon juice and turn on the appliance.
  • Gradually pour the oil through the hole in the lid and continue blending until it has the consistency of mayonnaise.
  • Season with salt and black pepper to taste and store in the refrigerator until ready to serve.
  • Green apple vinaigrette 
    • Ingredients
    • 2 red peppers, diced
    • 1/2 small red onion, chopped
    • 3 green apples, diced  
    • 1 lemon 
    • Salt to taste 
  • In a bowl add all the ingredients
