This dish is an exquisite classic of French cuisine, which is considered to be one of the tastiest delicacies. Elaboration
- Preparing marinade sauce for the dish: chop scallion, capers and gherkins very finely. Add lime juice, salt, pepper, olive oil and Balsamico Bianco vinegar, sea salt, sprinkle with Tabasco sauce. Mix gently.
- Prepare salmon fillet (washed and dried) for cutting: remove all bones using tweezers, as well as the skin. Cut into small cubes of 2x2 mm. To do this, use perfectly sharp knife with wide blade. To facilitate the cutting process, you can cool the fish fillet slightly.
- Combine the ready-made marinade sauce and cut salmon, gently mix and set aside into the refrigerator.
- Let’s prepare delicate scallops. Wash, dry and cut this specialty product into the same perfect cubes, as salmon – of 2x2 mm. Now, let’s marinate all this: add olive oil and soy sauce, according to your palate. Give time to cool down and marinate. Join seafood specialty and marinated salmon.
Serving
Place special form on a serving dish, sprinkled with orange sauce. Fill the form with cucumber slices, marinated salmon and scallops. Then, add a final chord – a spoon of salmon roe. Accompany this splendour with cracked Parmesan cheese, juvenile rocket salad and toasts. According to your taste, you can vary this dish as follows: emphasize the taste of salmon with delicate Philadelphia cheese or Ricotta cheese.
