SCALLOPS
8 scallops
4 sticks butter
Verdolagas
Corn ash and lemon
Spring onions (red)
Red serrano chilli
Smoked Maldon sea salt

THE WHITE GARLIC

1 baguette
50 g peeled almonds
2 spoonfuls vinegar
5 piquin chillies
37.5 ml olive oil
50 ml water
1 clove garlic (peeled)
Salt.

 METHOD

  1. First, blend all the ingredients together, then start adding the oil until emulsified.
  2. Season.
  3. Assemble with various shoots and 'verdolaga' leaves.
