Sea bass tiradito (ceviche without onion) with passion fruit sauce

Ingredients

1 lb sea bass fillet
1 large passion fruit
2 oz lemon juice
Coriander
2 oz julienne-sliced red onion
Salt
Pepper

 

Method

 

Using a sharp knife, made fine cuts in the fish fillets.

 

Add the lemon juice, salt and pepper and place them on a plate.

 

Leave in the fridge for 30 minutes until marinaded and the fish has been blanched.

 

Meanwhile, chop the passion fruit and remove the pulp and liquid (keep both); set aside in the fridge.

 

Prepare the onions by cutting them in thin julienne and add salt and a little lemon to pickle them.

 

Place in the fridge.

 

To serve

 

Place the marinaded strips of fish on a plate or rectangular tray; on top place the onion and coriander; lastly add the passion fruit pulp and juice. 

 

Garnish with edible flowers (to taste).
