Ingredients



PASTA
400g spaghettini pasta
1 pint cherry tomatoes
120g crab meat
50g bread crumbs
4 large leaves basil
1 tbsp chopped chives
Radish sprouts
2 cloves garlic – chopped
1 shallot – chopped
TOMATO GEL
200 ml tomato juice
dash of salt to tastedash of lemon juice to taste
50 ml olive oil
tsp xanthan.

METHOD

  1. Sauté shallots, garlic in olive oil and butter.
  2. To add cherry tomatoes and cook for 5 min.
  3. Deglaze with white wine add crab, herbs and cooked pasta.
  4. Cook until just hot.
  5. Plate pasta and finish with breadcrumbs and more herbs.
  6. Drizzle with tomato gel and add radish sprouts.

TO SERVE
