Ingredients

For the Tuna

Tuna 210g
Shallot 10g
Garlic 1g
Soy sauce 18g
Sesame oil 7g
Lime Juice 10g
Siracha Chili Sauce 5g
Sugar 4g
White Sesame
Chives
Radish 1

For the Red Salad

Fresh Tomato Pulp 100g
Red Paprika 30g
Beet 30g
Red Cabbage 20g
Olive Oil
Salt
White pepper
Lemon juice
Black sesame
Red beans

PREPARATION

Prepare the tuna
Cut the tuna into 1cm cubes. Chop the garlic and shallot. Mix the soy sauce, sesame oil, sugar, lime juice, Siracha sugar, lime juice, Siracha chili sauce, white sesame seeds and chives.
Cut the radish into slices to garnish the tuna.
 
Prepare the Red Salad
Remove the tomato skin and seeds.
Cut the tomato, red bell pepper, beet and red cabbage into 1 cm cubes, mix with salt, white pepper and olive oil.
Finally mix the black sesame and lemon juice.
