Burrata en corteza de Plátano verde

Ingredients

  • 100 gr chonto tomato
  • 100 gr eggplant 
  • 1 unit burrata 
  • 30 gr banana
  • 3 gr basil
  • 10 gr sugar
  • 5 gr salt
  • 4 ml olive oil
  • 5 ml white wine.

Initially we cut the tomatoes and eggplants into pieces and proceed to season with the liquid and dry ingredients. The next step is to mix and take them to the oven at 90 degrees for 12 hours. On the other hand, we make some green plantain chips that are very crunchy and we process it in the blender, this is how we will obtain the plantain powder that will serve us to find our Burrata. Finally, decorate the dish with the basil petals.
