Carbonara with smoked octopus

Ingredients

500 gr fresh pasta(spaghetti tagliolini)
300 gr smoked octopus
60 gr egg yolks
Salt
Olive oil
Sechuan pepper.


METHOD

  1. Put water to boil.
  2. In a pan put the olive oil and octopus,add salt and pepper then  after 10 min put it to rest.
  3. Cook the pasta and when cooked add it to the octopus and after 2,3 min add the egg yolks and some cooking water.
  4. Serve the carbonara with the octopus on top.
  5. If you like you can add some parmesan as well.
