250 g King Oyster mushroom
1 mandarin
100 g radish
12 g asparagus
15 ml vinegar
45 ml olive oil
BELL PEPPER SAUCE
1 yellow pepper
5 g garlic
15 ml vinegar
125 ml olive oil
Salt & pepper.

Make an olive oil and vinegar marinade; season with salt & pepper; clean the mushrooms and marinade in the vinaigrette; set aside. Remove the mandarin segments and add to the marinade; cut the radish into slices; marinade the tips of the asparagus in vinegar, salt and pepper; set aside until ready to serve.

Roast the pepper, then clean; blend with the other ingredients to create a light sauce; serve the sauce with the mushroom salad.
