MARINADE FOR MATJES
5 gherkins
1 large onions
200ml of milk
200ml cream
Bright balsamico
Salt pepper
SCHWARZBROTGEL
400g pumpernickel
600ml poultry broth
8g Agar Agar
CUCUMBER
600g gherkins
400g broth from the cucumbers
4g citras
10g agar agar
MOUSSE
150g quark
200g 3.5% yogurt
150g creme fraiche
50ml sushi sauce
Salt and vitamin C to Gusto
250g cream
6 sheets of gelatine
APPLE JELLY
500ml naturally cloudy apple juice
25g vegetarian gelatin
Light green food color
GRANNY SMITH ICE CREAM
700g Granny Smith apples with shell
300ml naturally cloudy apple juice
15g pectin
Sushi vinegar
vitamin C
100g yoghurt 10%
Green food color.
Marinade for Matjes
Cut gherkins, onions roughly. Milk, cream, and broth from the gherkins, stir gently with the mustard seeds and other aromatics, season to taste. To taste with balsamico to taste.
Put the fillets in the broth and let them draw for at least 24 hours.
 
Schwarzbrotcrumble
Let the bread dry for 1-2 days. Hexing a rough crumb in the blender. Season with onion oil, olive oil garlic paste, salt, pepper, sugar. Mix well and roast for 20 minutes at 160 degrees.

Mousse
Quark, yoghurt, creme fraiche, sushigesig, stir spices until smooth. Dissolve gelatine and work in. Whip cream and fold in.
Fill the mass into half apple shapes and freeze. Remove from the freezer one hour before use and dip into the warm apple gel mass so it looks like a Granny Smith from the outside.
 
Apple jelly
Bring to the boil, add color carefully and allow to rest covered. Then dip the mousse from the outside. Then cut into columns.
 
Granny Smith ice cream
Apples, apple juice Boil pectin in Thermomix. Cook for 3 minutes. Cool down, mix yoghurt with a blender. Season with Sushigesig, Vitamin C, a pinch of salt. Pass through a fine sieve and carefully work in the green color.
At least 24 hours in the freezer.
 
Apple / onion / cucumber mixture
Roughly mix a Granny Smith apple, an onion and a small cucumber. Then season with salt, pepper, lemon, sushi, vitaminC.
 
Also a little 10% natural yoghurt, pickled red onion in sushi dough and small shallot rings in sushi vinegar
