Quinoa tabbouleh

Ingredients

240 g cooked quinoa grain
4 tomatoes (chopped)
2 onions (cut brunoise)
1 peeled cubed cucumber
Juice from 4 lemons
12 leaves peppermint (chopped)
30 g parsley (chopped)
5 cl extra virgin olive oil
Salt & ground black pepper to taste.

Preparation:

Mix the ingredients together and leave to stand in the cold for at least 1 hour.

This salad is a delight in the heat of summer! 

Recommendation: accompany with a chilled rosé.
