Spicy cauliflower

Ingredients

1 whole cauliflower (large)
1 spoonful Garam masala
½ spoonful cinnamon powder
1 spoonful turmeric
Sea/Himalayan salt (to taste)
Merken / Hot/Sweet paprika
½ spoonful cumin sedes
1 cup vegetable stock
Olive oil.

METHOD

  1. Pre-heat the oven to 180ºC.
  2. Put the cumin seeds into a mortar and grind gently. Add the spices in little by little, stirring well. Pour the oil into the bowl and stir.
  3. Salt the cauliflower and massage the above mixture in until it covers both sides properly.
  4. Put the cauliflower face down on an oven tray (not too big).
  5. Cover with tin foil, then bake for 30 minutes. Uncover and bake until golden.
