4 to 8 heirloom tomatoes cut to preference (various sizes and colours)
8 broccolini
200 ml goat cheese
mousse
2 ripe peaches (grilled)
100ml black olive
tapenade
100ml puffed amaranth
50 g sorrel sprouts
1 peeled cucumber
BLACK OLIVE TAPENADE
250ml sun dried black
olives
1 tbsp balsamic vinegar
2 tbsp olive oil
1 tsp chopped rosemary
MARINADE
Blend all ingredients in blender mix to taste with tomatoes
1/2 tsp sesame oil
3 tbsp olive oil
1 tbsp mustard
1 tbsp honey
1 tsp lemon juice
1/2 tsp salt
GOAT CHEESE MOUSSE
1/2 cup goat cheese
1/8 cup 35% cream
1 tsp anise seed
salt and pepper to taste.
