Cheese croquettes with leftover chips

Chips are a popular snack and also an inseparable guest having friends party at home. But todaywe have a recipe in which the first violin is played not by chips, but by what is left of them – crumbs.

Ingredients

  • Leftover chips - 50-100g
  • Mozzarella cheese - 125g (1 head)
  • Hard cheese (Parmesan type)- 125g
  • Hazelnuts - 80g
  • One Egg
  • Half lemon
  • Parsley
  • Salt
  • Pepper
  • Oil for frying

First of all, let's prepare the hazelnuts. Heat the oven to 180 degrees and bake the hazelnuts for about 10 minutes. Leave the nuts to cool for a few minutes and then rub them lightly between hands to remove the skins.
Place nuts, mozzarella, grated hard cheese and leftover chips in a bowl and blend everything with a hand blender (or termomix) until there are no large pieces left.
Now mix an egg, the lemon zest and juice of half a lemon, place chopped parsley into the mass, season with salt and pepper.
It's time to make croquettes (size 25-30g) and fry them in a heated pan for 2-3 minutes on both sides.
Would be much easier if you had a fryer on the side.
