French toast from coffee grounds

By Justinas Kapkovicius
Why not combine two of your favorite breakfast components into one? Coffee and toast is everyone's favorite combination, but today it travels in a slightly different way.

Ingredients

  • Old Ciabatta bread
  • Coffee grounds - 40g
  • Two Eggs
  • Double Cream - 250ml
  • Espresso coffee - 150ml
  • Brown sugar - 40g
  • Butter - 50g
  • Pinch of salt
  • Maldon salt

First of all let's mix coffee grounds with cream. Pour it into a jar and leave it in the fridge to let the cream absorb the flavor. I recommend doing this overnight, but if you want to speed up the process, leave it for at least an hour.
Strain the cream through a fine sieve.
Beat eggs with sugar and salt in a bowl, pour coffee and half of strained cream.
Beat until a light foam begins to form.
Dip the bread into the whipped mixture and fry it in a pan on heated butter for about one minute (depending on the thickness of the bread). Turn it over and fry the other side for the same amount of time.
Whip the rest of the cream that we didn't use.
I recommend tasting the toast spread with butter and a pinch of Maldon salt, whipped cream saturated with coffee grounds or maple syrup.
