Fish strips with curried mayonnaise

INGREDIENTS
100 g fresh white fish (sliced into thin strips)
DRESSING
2 spoonfuls mayonnaise
1/2 spoonful jalapeño chilli vinegar
5 leaves basil (chopped)
1/2 spoonful curry powder.
METHOD
- Place on a spatula ready to be moved onto the plate where it will be served.
- Season with sea salt, a few drops of olive oil, diced red onion and strips of chilli; lastly, drizzle a few drops of lime juice.
- Garnish with basil flowers and 'verdolaga' leaves
- Stir everything together.
- Make a shape on the serving plate with the mayonnaise; place the seasoned fish strips across this sauce.
