Ingredients

Chickpea flour
Rice flour
Sodium bicarbonate
Cumin
Fresh ginger
Fresh coriander
Fresh green chilli pepper
Salt
Water
Fresh spinach
Olive oil

Method:

 

Mix the flours, bicarbonate, salt and cumin with water to create a dense paste. Leave to stand.

Cut the ginger, coriander and peppers and add them to the paste. Leave to stand.

Chop the spinach and add it to the paste.

Heat up plenty of olive oil and, using a spoon, make balls from the paste. Place them in the pan to fry until golden brown.

Drain off the excess oil and serve with mint chutney.
