Ingredients

BASIL OIL

100 g basil
300 g virgin olive oil

CREAM CHEESE

50 g mascarpone cheese or similar
1 g lemon juice
5 g olive oil
With or without salt
With or without pepper

TUNA

150 g fresh loin of tuna
With or without paprika
With or without salt
With or without pepper

Basil oil 

 
Strip the basil leaves and blanch rapidly in boiling water. Cool off in iced water.
 
Blend the leaves with the olive oil. Strain and decant. Set aside in the cold.
 
 
Cream cheese
 
Mix all the ingredients together. Set aside in the cold.
 
 
Tuna
 
Mix the spices and season the tuna all over.
 
Preheat a pan.
 
Cook the fish all over on a high heat for a short time.
 
Leave to stand, chop into thin strips.
 
 
Serving 
 
Pour some basil oil onto the deep plate. Then, add on the hot tuna strips and drip a few drops of the cream cheese around.
 
Top off with tomato seeds dressed with olive oil and salt.
