Biography

Heather is an award-winning chef, pastry chef, and consultant. She runs her full-service Pastry and hospitality consultancy, Smart Patisserie, alongside her partner and co-owns the London-based gourmet doughnut concept, Longboys. Her consultancy takes her around the globe, from restaurant and hotel openings, demonstrations, menu development through kitchen design. Heather’s previous roles included Executive Pastry Chef in two of the most prestigious 5-star hotels in London; Shangri-La At the Shard, and the uber-luxurious Mandarin Oriental, Hyde Park. She has been awarded locally and globally, including winning Best Contemporary Afternoon Tea in the London Afternoon Tea Awards shortly after joining the Mandarin Oriental Hotel. Prior to this she oversaw production for the Hakkasan Groups’ dim sum tea-house, Yauatcha and its retail patisserie outlets, developing innovative entremets for their Michelin-starred concepts. Her love of bakery inspired her to work with several world class bakers in America and Canada, amassing a strong knowledge across all areas of pastry, from viennoiserie, chocolate, sugar work and patisserie. In her early career Heather worked in the savoury kitchen, amassing experience through some of New Zealand and London’s finest restaurants and hotels, including Maze by Gordon Ramsay, and later travelling the globe as a Head chef on some of the world’s most opulent super yachts. Her love for travel and exploring different cuisines guided her palette, and she enjoys exploring unusual flavour combinations.

Heather is intuitive and is guided in her creations by her various inspirations and experience, her sense of aesthetics and the love of precise execution coupled with a clean, balanced flavour. Heather enjoys training pastry chefs and building dynamic teams and considers her most successful achievement to be the development of her staff. Heather’s knowledge of all areas of patisserie, coupled with her drive and energetic enthusiasm has led her to become an ever-emerging force within the UK pastry industry.
